
Really! You can have homemade rolls in one hour! These are just about ready to go in the oven.
The Recipe:
From the Kitchen Aid Cookbook
1/2 cup milk
1/4 cup sugar
2 teaspoons salt
3 tablespoons butter
3 packages active dry yeast
1 1/2 cups warm water (105 to 115 degrees)
5-6 cups all-purpose flour
Place milk, sugar, salt, and butter in small sauce pan. Heat over low heat until butter melts and sugar dissolves. Cool to lukewarm.
Dissolve yeast in warm water in warmed mixer bowl. Add lukewarm milk mixture and 4 1/2 cups flour. Attach bowl and dough hook to mixer. Turn to low speed and mix 1 minute.
Continuing on low speed , add remaining flour, 1/2 cup at a time, and mix about 2 minutes, or until dough clings to hook and cleans the side of the bowl. Kneed on med. speed about 2 minutes longer, or until dough is smooth and elastic. Dough will be slightly sticky to the touch.
Place dough in greased bowl, turning once to grease the top. Cover. Let rise in warm place until doubled in bulk, about 30 minutes.
Punch dough down. Shape into whatever kind of rolls you want, clover work really well with this recipe(the three dough balls in one muffin tin). Let rise another 30 minutes.
Bake at 400 degrees for 10-12 minutes, or until golden brown. I like to brush the tops with a little beaten egg for a nice golden top.
The night I made these I split the dough in half and added some grated cheddar cheese to the dough and then shaped them. Yummy cheese rolls!
