Ingredients
1/2 cup applesauce
1/4 cup butter softened
1/2 cup white sugar
1/2 cup light brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon (optional)
1 cup semi-sweet chocolate chips
2 tablespoons confectioners' sugar (optional)
Directions
1.Preheat oven to 350 degrees F. Line muffin cups with paper bake cups.
2.In large mixer bowl, beat butter, sugar, brown sugar, egg, and vanilla until well blended. Add applesauce, blend well.
3.In a separate bowl, stir together flour, cocoa, baking soda, and cinnamon, if desired. Add to butter mixture, blending well. Stir in chocolate chips. Fill muffin cups 3/4 full with batter.
4.Bake at 350 degrees F. for 22 to 26 minutes or until wooden pick inserted in center comes out almost clean. Cool slightly in pan on wire rack. Sprinkle muffin tops with confectioners' sugar, if desired. Serve warm.
I don't know how many chocolate recipes this makes but these were really good, and they have applesauce in them so how bad can they be!?

These muffins look delicious! You can never go wrong with chocolate. Where's the homemade marshmellow recipe that you were going to post. I must have missed it. After reading your post the other day about the pesto pasta, I went home and made it. I haven't had pesto in so long and it was so good. I love pesto!
Ha, I like the applesauce disclaimer: "they have applesauce in them so how bad can they be?" They look soooo good...
