Mini Pancakes


It seams that I do a lot of "mini" things, maybe cause I feed little mouths? Anyways here is our favorite recipe for them. I make the whole batch and when they are cool I put them in a freezer bag and freeze them. To reheat them I just pop them in the microwave for a minute or so. There great to eat on the way to school if you like them without syrup like my daughter and I do. There a bit sweeter then regular pancakes so there good on there own with just a little bit of butter. I got the recipe from one of my favorite cookbook authors, Donna Hay, her books and magazine are awesome.

Pikelets
Combine 2 cups all-purpose flour, 2 teaspoons baking powder and 1/2 cup of sugar in a bowl. Combine 2 eggs, 1 1/2 cups milk and 4 tablespoons melted butter in another bowl, then whisk into the flour mixture. Cook over low heat in a frying pan greased with butter for 2-3 minutes. Turn and cook for 2-3 minutes until golden.
I use a small cookie scoop to make them all the same size.

Okay, I just barely today when you talked about the swap figured out that you "Cara" are not the same person as another "Cara" friend that leaves comments for me on my blog. I'm sorry! I don't know if you've left comments for me before and I figured it was from my other Cara friend. Now I will pay more attention and check to see which Cara it is.

I tried yesterday and today to go to the post office to mail your package, but my kids were so crazy naughty in line that I ended up just leaving. I have it all ready though! I'm excited to send it to you. It's not homemade, but hopefully you'll think it's fun.

I love the idea of freezing pancakes to warm up later. You have some great ideas on your blog!

um...yumola! I just tried those for dinner. Rhett was at some expensive dinner and so I didn't want to cook and those looked so tasty. And they were! I love getting your recipes. Hayden said, "HUH...why did you make them little?" hehehe

The scoop! I've never thought of the scoop! Very smart.

I made the molten chocolate cakes yesterday. Oh Yeah! I'm going to call those PMS cakes. Fixes every indulgent craving I've ever had. What would happen if you tried it with butterscotch chips, or the cinnamon ones or whilte chocolate? My husband doesn't like chocolate, but likes all those other flavors. I might do some experimenting today!

And I haven't read a book since school started. Mostly though becaue we have only had a TV since last Christmas. So this is my first fall of enjoying season premiers. It's like a drug, the tv is.
