1 cup of milk
1/4 cup butter, melted
1 large egg
1 1/4 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
Heat oven to 400 degrees. Grease bottom and side of round pan, 9x1 1/2 inches, or square 8x8x2 inches, with shortening(or just spray it if its non stick).
Beat milk, butter, and egg in large bowl. Stir in remaining ingredients all at once just until flour is moistened(batter will be lumpy). Pour batter into pan.
Bake 20-25 minutes or until golden brown and tooth pick inserted in center comes out clean.
You could also make these into muffins, with or with out muffin papers in the muffin tin.

I haven't ever really tried a sweet recipe for cornbread. You're still baking and cooking up a storm, aren't you? I guess your family does need to eat, though. Sorry you didn't have a Cinco de Mayo baby, sounds like he's got a mind of his own already!
